The limited shelf life of the vegetable components represented a constraint on the commercialization of certain ready-to-eat references.

The Challenge
The reduced shelf life of the vegetable components made it difficult to manage certain ready-to-eat references, limiting their distribution and commercialization possibilities.
The short shelf life also entailed a greater risk of waste related to expiry, making it necessary to act on the product’s stability.
Agronomic Control
The process took the vegetable component into account from the upstream stages, with the aim of increasing control over the variables that can affect the quality of the final product.
A more controlled raw material is in fact the starting point for developing references that are more stable and consistent over time.
The extraction process
Starting from the characteristics of the raw material, the process was developed with a precise objective: to extend the shelf life without compromising the product’s quality and performance.
The work led to the creation of three ready-to-eat references with a shelf life more than three times longer than conventional products.




The Result
The extended shelf life made it possible to manage the references more efficiently along the supply chain, reducing waste and simplifying distribution activities.
The project also made it possible to bring to market products previously penalized by the limited shelf life of the vegetable components.
